Classic flavours and a classic dish

IT FEELS GREAT to share this recipe for baked ricotta and spinach stuffed shells in a gorgeous pomodoro sauce because it’s been such a long time since I popped up here on Substack!
I know it’s been a hot minute so let’s do a little recap - for a start, you might notice that I’ve spruced up the branding on here. Does this mean Pasta Sunday is back? Well, sort of. I’m not planning on turning paid subscriptions back on, and I just sort of want to feel this out and share what I’m up to a bit more organically - recipes, kitchen adventures and notes, news and events - that sort of thing. But! I felt like a little facelift wouldn’t go amiss. So whether you’re new here or have been subscribed since the start, I’m hoping to use this platform to connect with you off the other apps in words over video. Saying that last sentence also feels great.
I’ve been working away on a few things bts: continuing to share recipes (now housed on my website, for free), rebuilding said website so it’s better formatted for sharing recipes, running my first in-person pasta workshops here in Brisbane (I’m about to announce dates for another workshop taking place later this month - you can still join the waitlist here!), making some cute little market totes, plus working on how I want to use this platform going forward (I mean there are a fair few of you subscribed so it would be crazy not to!). All while really loving every single second of my continued journey into motherhood - the toddlerhood era has been so, so fun.
Speaking of which, these baked shells made for the perfect prep-ahead dinner that also ticked the boxes for the little one. Classically the filling is made up of spinach and ricotta, however I really like mixing up the greens mix depending on what I have going on in the fridge. It’s a great way to use up leftover leafy greens at risk of wilting to death. While there are a couple of components to put together, all in all it’s an easy dish to make. Also makes for excellent leftovers!
