Beetroot salmon gravlax = an unofficial resurrection of my newsletter
A very festive canapé that you still have time to make
Hello dear friends, and to all of the new subscribers who have joined since I put this publication on indefinite hiatus roughly 6 months ago. Am I re-launching this newsletter? Maybe… I’m still working out the details. But for now I wanted to pop this beautiful recipe straight into your inboxes, just in time for Christmas.
This year my fiancé and I are spending Christmas Day just the two of us - I’m roughly 3 weeks away from giving birth to our first child, and the idea of commemorating our last Christmas as two before we become three (or four including our Gordon!!! aka our first baby) feels quite special. That and the fact I don’t want to be caught going into labour early visiting family interstate *panic theoretically ensues*.
While I’m looking forward to a very chilled Christmas, catering for just the two of us does kind of take the fun out of Christmas cooking. After all, I love to host around this time of year and I especially love making dinky little canapés to pass around a room on a cute platter. So to tick my box of getting to host and also to not have to do anything on Christmas itself, we snuck in a small friendmas event over the weekend. So yeah bb, you bet I made canapés.
Full disclosure, you can make these cute blinis far more quickly by whizzing out to the shop and buying all of the components ready to assemble - however they will absolutely not taste as fabulous (nor will you feel as smug) as making them from scratch. Sure, there is a 48 hour lead time to this recipe, however it’s worth noting the active cooking time is minimal. Really, you just need to let the cure do it’s thing. Plus, how could you say no to the COLOUR on that salmon?
