Hello friends, happy new year! While a few of you might still be in 2022 by the time I send this, here in Australia we will be well and truly into the first day of the year.

The end of 2022 was a wonderfully busy but also restful festive period for me, and you may have noticed that I’ve taken a fair bit of time off. Let me tell you, it was needed! And while I have some exciting recipes planned for this series, for the first day of the year I thought it would be a great opportunity to share some more in-depth detail on how to make pasta - a pasta dough 101, if you will - to aid you on your pasta journey for 2023.
