Hello! Welcome to Pasta Sunday. I am SO happy to have you here for the first in this series!
I started Pasta Sunday as a bit of a personal project/COVID hobby in 2020, where I’d dedicate Sunday afternoons to making fresh pasta, learn about new shapes and sauces, sip wine and listen to music. It quickly became my favourite way to round out the week, and while I don’t exclusively reserve Sundays for making fresh pasta anymore, I still love to indulge most weekends. There’s just something wonderful about allowing yourself the luxury of time to focus on creating something. Added bonus when it’s edible.
Anyway, I am so excited to share this small initiative with you, where I’ll be sharing new recipes on Sundays for you to try. Hopefully it will inspire you to slow down, unwind and get lost in the sauce.
I think this recipe is the perfect kickstart to the series because it’s a fairly easy shape to tackle if you’re new to making pasta, and the sauce is equally as effortless. Plus let’s not neglect the fact that those little pockets in the funghetti pasta are perfect for catching all of that creamy, mushroomy goodness!
BTW, a note on the shape - I struggled to find out much about its etymology, but what I can tell you is that it’s similar to sorpresine, the ‘little surprises’ that mimic tortellini in shape at a glance but are in fact void of any filling. A quick, easy and affordable alternative to stuffed pasta. I’m here for it!
Suggested wine pairing
It wouldn’t be a Pasta Sunday without a glass or two of wine to enjoy with the finished dish (or while cooking for that matter). I love that mushrooms are pretty easy to pair with wine, in fact I think anything goes. However, I do particularly love Pinor Noir and Pinor Noir particularly loves mushrooms thanks to the earth-driven profile many have.
